Setup PerceiverIO large data training

The goal is to setup all code and configurations to train and validate the ScalarSITSPerceiver on data volumes which are representative of what we will use in RELEO.

This needs:

1. Hydra configurations
2. Slurm jobs
3. Training scripts
4. Python code for callbacks

I have started by shamelessly copying from @jprissi dev branch.
